After healthy servings of turkey, honey-baked ham, stuffing, cream biscuits, tarts, pies, and lots of wine, my husband made a exceptional post-Thanksgiving meal. First out, a proper roesti topped with crème fraîche and smoked salmon. Mmmm, it was heavenly. The roesti was perfect, bits of crunch with beds of silk inside. "Oh and can you brine a chicken while you're in the kitchen?" Of course. The chicken was so tasty, juicy, and tender, the whole family went silent as we devoured the it. The kids loved it, as they licked their little fingers clean. Finally, we - the parents - savored one of our favorites, the ethereal L'Inedit. Cheers.
