Last year, we hosted a potluck Thanksgiving in our home. My dad made turkey and ham with some vegetable sides. My younger siblings and families brought over more savory and sweet dishes for the table. Between my brother, sister, and I, we had three very young toddlers running around. A couple of aunts and uncles also joined us. And, my parents took their annual holiday card photo with their grandchildren.
My father recently had knee surgery, with some complications, that kept him in the hospital for about two weeks. Relieved and happy to be home, we decided to hold a potluck at my parent's place. However, this year, they were not allowed to do anything but rest and enjoy a special Thanksgiving. We divided the menu among my brother, sister, and I and created a wonderful rich feast for our families. This year, we had three toddlers and two babies, with one more on the way (congratulations to my sister).
Good health and great family - we have a lot to be thankful for. And, my parents took their annual holiday card photo with their grandchildren. Pure joy.
My food to-do list: toasted pita with hummus, cauliflower soup with sausage breadcrumb topping, fennel-red onion-foccacia stuffing, green beans with shallots & walnuts, creamed spinach with parsnips, and a pear tart with pecan crust.
